11.2 oz grass fed steak (Cut in half as I am trying to lose some weight) , scallops and roasted buttered corn.
Salt, pepper, garlic powder, and onion powder on the steak, butter, olive oil and salt on the scallops.
Amazing.
No clue why it’s rotated.

No arguments here. In New England they used to grind up lobster and use it as fertilizer. It was not considered a delicacy until its relative scarcity drive the prices up. My grandfather used to say “Christ, a horse turd would taste good if you dipped it in enough butter.”

For steak, I’ve put Alton Brown’s suggestion to the test, and it’s fantastic. Several hours before either grilling or pan roasting the steak, coat it with a small amount of olive oil, then generously coat with kosher salt. Cover lightly with a towel, and place in your fridge for at least 4 hours, preferably over night. All the salt will dissolve and leave the steak perfectly seasoned. It is very good.

Haha that’s a good one. They used to feed prisoners with lobsters. I mean, I love a good lobster roll, and a local taco joint makes a mean lobster taco, but scallops are just better.

Right there with you.
Last week I had the pleasure of butchering, prepping, and cooking a tenderloin, then used t he same salt block to sear the scallops to absolute perfection.
I didn’t buy the food, but I did get to cook it and help eat it, and it was one of the best meals I’ve ever experienced.

Kosher salt, pepper, and hint of garlic powder and onion powder for me. I like to let it sit out for a little while and get to room temp.
I do love prepping meat the day before if possible, but it doesn’t happen often.
